Chia seed puddings seem to be all the rage lately. Pintrest boards are covered in them, healthy blogs are screaming their praises, and I have to admit there is a reason they are so popular. I have to admit I am a big fan! It took me a couple years to actually try this, but now I know why they are so popular. The chia seeds, when moistened, turn into this plump, little ball of fun. The texture of them is kind of like tapioca pudding. Add some creamy milk, a little sweetener, and you have a dessert that you don’t have to feel guilty about eating. It’s a win-win for everyone!

Caramel Orange Fig Chia PUdding
Ingredients
  1. 1 cup coconut milk or almond milk
  2. 1/4 cup chia seeds
  3. 2 Tbs. orange juice concentrate
  4. 1 Tbs. honey or agave
  5. 1 tsp. vanilla bean paste or extract
  6. Fresh figs (optional)
  7. Caramel topping (optional)

Instructions
  1. Mix the first five ingredients together in a place in a bowl or jar, stirring a few times to keep it from clumping. When ready to serve, top with whipped coconut cream, a drizzle of caramel topping and fresh figs (or other fruit of choice).

Chai Granola Fruit Chia Pudding
Ingredients
  1. 3/4 cup vanilla almond milk
  2. 1/4 cup chai
  3. 1/4 cup chia seeds
  4. 1 tsp. vanilla extract
  5. 1/2 tsp. chai spice or cinnamon
  6. Granola
  7. Fresh fruit of choice

Instructions
  1. Mix togther in a bowl the vanilla almond milk, chai, chia seeds, vanilla and chai spice until smooth. Keep this pudding in the fridge if you'd like to serve by iteself. Or, serve in parfait form with fresh fruit and granola. Serve right away or hours later.

Vanilla Chia Pudding
Ingredients
  1. 1/2 cup vanilla almond milk
  2. 2 Tbs. chia seeds
  3. 1 tsp. vanilla extract
  4. 5 drops stevia, agave or any other sweetener you wish
  5. Fresh berries
Add ingredients to shopping list

  1. Mix together the almond milk, chia seeds, vanilla extract and stevia. Let this pudding sit in the fridge for a few minutes, or up to a few hours. When ready to serve, serve with sliced berries.
