I am super excited to share this recipe with each of you! Want a delicious, chocolaty, rich treat that you don’t actually have to feel guilty about eating? This is the recipe for you! It is a lovely thing to indulge in a chocolate dessert without feeling like you’ve compromised your entire week’s diet. Ellen Johnson, my friend from My Nova Vita reminded me of this recipe for Chocolate Coconut Chia Pudding I made years ago. I made several batches this past week and remembered how much I LOVE it! It really curbs your sweet tooth cravings and is a healthy way to enjoy a treat without sacrificing too many calories.
I love the Chocolate Coconut version, but come back tomorrow for some variations that Ellen loves too.


- 1 cup chia seeds
- 1/2 can coconut milk
- 1-1 1/2 cup almond milk
- 1 tsp. vanilla
- 1/2 cup shredded coconut
- 1/3 cup cocoa powder
- 3-4 Tbs. Truvia (or other sweetener)
- Dash salt
- I topped mine with whipped coconut cream, but you could use any whipped topping you wish
- Mix all of the ingredients together in a mixing bowl until combined. Put in the fridge for an hour, or overnight. Top with extra coconut, whipped topping and/or shredded chocolate. Whipped cream can be whipped from the fat portion of the coconut milk if you need this dessert to be dairy free.
