It’s just about time to start making your pies for Thanksgiving and Ellen Johnson (from MyNovaVita) is here to share a healthier pie crust recipe with you. For those of you eating a Vegan diet, or just wanting to be a little more health conscious, this recipe is the one for you! Thanks Ellen for another delicious recipe and happy baking friends!
- 2 cups flour
- 3 Tbs. sugar
- 1/2 tsp. salt
- 10 Tbs. vegan margarine (Ellen uses Nutiva)
- 2 Tbs. coconut oil
- 3 Tbs. ice water
- 1 tsp. vanilla extract
- Combine the flour, sugar and salt in a large bowl. Cut in the vegan margarine, mixing until crumbly. In a separate bowl, whisk together the coconut oil, vanilla and water, then add to the flour and sugar mixture, mixing just until dough forms. Once the dough pulls together and there's no extra flour, cover the dough with plastic wrap, then chill in the refrigerator for at least 30 minutes. When ready to roll out, remove from the fridge. Lightly flour the counter when ready to roll out for your pies.
