My friend Debi is a southern gal through and through. She grew up in the South and has a gift of cooking the most delicious, Southern style food you’ll ever eat. I am often the recipient of her amazing Southern favorites and feel spoiled all the times she brings me food. She’s pretty much one of the most generous people I know and the other day she brought over this beautiful dish of this Southern Sweet Potato Casserole. It was unlike any sweet potato dish I’ve had and it was incredible! My kids and I sat down and devoured almost the entire dish in only a few minutes. It could be served as a side dish at Thanksgiving, or for dessert. No matter when or how you serve this, you’re going to love this Southern addition to your holiday meal!

- 4 cups cooked and mashed sweet potatoes
- 1/2 cup brown sugar
- 2 well beaten eggs
- 1/4 cup evaporated milk
- 1/2 cup butter
- 1 ts. vanilla extract
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup pecan pieces
- 1/3 cup butter
- Mix basic ingredients together and place in a lightly greased dish. Mix topping and place on the basic ingredients. Bake for 30 minutes at 350 degrees.
- *If you're using canned yams, a 17 oz. can of yams yields a little over one cup mashed sweet potatoes.
