This past summer I started making these grilled vegetable hummus wraps. you know when you are still making a recipe several months later, it’s a good one! Every week I try and serve at least one vegetarian meal to my family to help cut down our food budget, as well as cut some calories. If I haven’t done much prep work, this is the meal I turn to. With our warm January here in Utah, it’s nice to be able to do some grilling outside when it normally would be covered in snow. Grilled Vegetable Hummus Wraps
Ingredients
  1. 1 package whole wheat tortillas or favorite wrap flavor
  2. 1 cup mozzarella cheese, shredded
  3. 1 cup favorite hummus
  4. 1-2 zucchini squash, sliced horizontally
  5. 1-2 tomatoes, sliced
  6. 1 red onion, sliced
  7. 1-2 yellow squash, sliced horizontally
  8. Mushrooms, eggplant, any vegetables would work
  9. Olive oil
  10. Montreal Steak Seasoning
  11. Garlic Powder, to taste
  12. Salt & pepper, as needed

Instructions
  1. Slice the vegetables and place on a cookie sheet. Drizzle the vegetables with olive oil. Season with Montreal Steak Seasoning, garlic powder and salt and pepper. Heat an outdoor grill to medium-high heat. Place the vegetables on the grill and cook until they have nice grill lines on the back side and then turn and cook on the second side. Tomatoes will need to cook the least amount of time, so put them on at the very end of the cooking. Squash and onions will take the longest to cook so put them on first.
  2. Once the vegetables are grilled, prepare the wraps. Spread a generous portion of the hummus on the top of one of the tortillas. Sprinkle with mozzarella cheese. Place the hot vegetables on top of the cheese to melt it a little. Roll the wrap up and serve warm.
Notes
  1. *Serve on a gluten free tortilla for a gluten free meal. If your family likes meat, add some grilled chicken to the wraps for extra protein.
