Cheesy Three Meat Pasta Bake

Ingredients
1 onion, diced
1 lb. ground pork sausage
1 lb. sliced chicken or pork sausage
1/2 cup pepperoni
3 garlic cloves, minced
24 oz. spaghetti sauce
1 can diced tomatoes
1-2 tsp. salt, as needed
Pepper, to taste
1 tsp. Italian seasoning
2-3 Tbs. fresh parsley, chopped
2-3 cups mozzarella cheese, shredded
1/2 cup parmesan cheese, shredded
1 lb. penne pasta

Instructions
Dice the onion into small pieces. Place in a large saute pan and saute with the pork sausage until the pork is cooked through. Slice the precooked chicken or pork sausage link into thin strips. Add to the ground pork and continue to saute until the slices are browned and cooked through. Cut the pepperonis in half and add to the meat as well.
To the meat mixture, add the spaghetti sauce, diced tomatoes, garlic and seasonings. Bring the sauce to a simmer and let boil for 10-15 minutes, or until the sauce begins to thicken. If the sauce isn't thick enough, you can always add a half of a can of tomato paste if needed. Season with salt and pepper as needed.
While the sauce is simmering, bring a large pot of water to a boil and add the pasta. Cook the pasta until it is tender and soft. Place half of the noodles into the bottom of a 9x13 pan that has been sprayed with non stick cooking spray. Pour half of the spaghetti sauce over the noodles. Sprinkle with half of the shredded cheeses all over the top of the mixture. Add the rest of the noodles on top and spoon the rest of the sauce over the noodles. Sprinkle the top with the rest of the shredded cheese.
Place the pasta dish into an oven at 350 degrees until the cheese is melted and bubbly. If you want a nice golden brown on the top, you can broil for 30-60 seconds, watching carefully. Garnish the pasta dish with extra chopped parsley or sliced green onions.
