Thanks to my friend Ellen Johnson from My Nova Vita, she is sharing a definite sure way to LOVE eating brussel sprouts. If you don’t think you’re a fan, you haven’t tried Ellen’s recipe yet. I didn’t think I liked these little cabbage bundles until Ellen introduced me.

I have to admit I’m a big fan now–especially with this lemon aioli.  Pick up a bag of these brussel sprouts at your local Sprouts for only $1.49/lb. this week. Enjoy!

Lemon Aioli
Ingredients
  1. 1/2 cup vegan or regular mayonaisse
  2. 1 tbsp fresh lemon juice
  3. 1 tsp lemon rind
  4. 4 cloves roasted garlic
  5. 1/2 tsp chopped chive
  6. 1/2 tsp chopped parsley
  7. Salt and pepper to taste

Instructions
  1. Mix together and enjoy!! Keep in the fridge until ready to serve.

Carmelized Brussel Sprouts
Ingredients
  1. 1 pound Brussels sprouts
  2. 4 large garlic cloves
  3. 2 tablespoons unsalted butter
  4. 2 tablespoon olive oil
  5. 1/2 cup diced red onion
  6. 2-4 tbsp maple syrup mixed in 1/2 cup water
  7. Salt and pepper to taste

Instructions
  1. Trim Brussels sprouts and halve lengthwise. Cut garlic into very thin slices. In a large skillet melt butter with oil over moderate heat. Arrange sprouts in skillet, cut sides down, in one layer. Sprinkle sprouts with and salt & pepper. Cook sprouts, without turning, until crisp-tender and undersides are golden brown, about 10 min add onions and garlic and cook over moderate heat, stirring, until onions are translucent about 2 minutes. Pour maple syrup/water mixture over the sprouts and continue to cook over medium heat until the water has evaporated and the sprouts are glazed. Serve warm!
