It’s May and I couldn’t be more excited. This is one of my favorite months of the year. The flowers are blooming, the grass is growing, the sky is blue and the sounds of birds make my heart sing with gratitude for new life and a beautiful spring! With it being spring that means lots of busy nights with soccer, children’s activities, etc. and in order to get dinner on the table quickly, I need simple recipes that make my life easier. 

This sandwich from our meal planner this week is one of these simple recipes. I have several grilled chicken breasts in my freezer and with those, these sandwiches came together in less than 15 minutes. It was fabulous! I also loved the fact this sandwich, if served on a sandwich thin slice of bread, was not only low in carbs, but high in protein and vegetable goodness.
