One of my favorite parts about summer is the fresh veggies from the garden. If you have a lot of zucchini, yellow squash, onions and peppers in your fridge, this is the recipe for you! When I’m looking for a simple side dish, this is my go-to this time of year. Hope you enjoy and are having a great week 😉 

Summer Squash Medley
Ingredients
  1. 2 medium zucchini, diced
  2. 1 yellow squash, diced
  3. 1/2 red onion, diced
  4. 1 red bell pepper, diced
  5. 2 Tbs. butter or olive oil
  6. 1 Tbs. Montreal Steak Seasoning
  7. 1/4 tsp. red pepper flakes
  8. Salt as needed

Instructions
  1. Dice all of the vegetables into small dices. In a saute pan, heat the butter or olive oil until hot. Add the onions, zucchini and yellow squash and saute until golden brown and tender. Don't over cook the squash or it will be mushy. Once the onions and squash are tender, add the red pepper and seasonings. Cook for another 3-5 minutes and serve. You can garnish with parmesan cheese if you'd like, or just keep it dairy free.
