This bunny cake will bring a smile to all of your Easter guest’s faces. It’s super simple to make and only takes one cake mix, some pre-made frosting, coconut & jelly beans.
- 1 box vanilla or funfetti cake mix
- 3 eggs
- 1 cup water
- ⅓ cup oil
- 2 containers prepared frosting or homemade
- 14 oz. bag sweet flaked coconut, divided
- Green food coloring
- White or pink paper for the ears
- Jelly beans for the eyes and decoration
Preheat oven to 350° F. Prepare the cake mix according to box. Bake the cake in two round pans that have been sprayed and have a layer of parchment paper on the bottom. Remove from the oven and let the cake cool.
Lay 1 layer on counter and cut in half, right down the center so you will have 2 pieces the same size. To join the two pieces together, lightly frost one side of one of the half layers, then lay the other half layer on top of it, aligning the rounded edges on top. Cut the second cake round in half and frost the top of one of the halves and add to the other two halves that have been frosted together (making 3 halves in total). Stand the 3 cake halves, upright on cut edge on tray or covered cardboard.
Cut the remaining cake piece into a round piece for the tail and a rectangle piece for the head. Attach to the bunny on the front and back with a little frosting. Frost entire cake, then lightly press coconut into the frosting.
Cut out ears from paper of choice. Color the centers of ears pink or use pink paper. Attach jelly beans or gumdrops for eyes and nose. Decorate the bunny face with jelly beans. Stick toothpicks into the cake on both sides of nose for whiskers, if desired.
In a mixing bowl, stir together 1 cup coconut, and 2 to 3 drops green food color until well blended and colored. Surround bunny with the green coconut; then decorate with additional candies, if desired.
